While on a family camping trip at one of our provincial parks we
were given a demonstration by the park attendants on how to make Bannock on a campfire.
This is the recipe they shared with us – it was yummers!!!
2 cups all purpose unbleached flour
2 Tablespoons baking powder
2 Tablespoons oil, butter margarine or lard
1/4 tsp salt
Water about ¼ cup
Cooking oil for pan
Mix flour, salt and baking powder in a medium sized container or
a Ziploc bag works great too and no dish or pan to wash. With a
fork work the fat into the mixture, if using a plastic Ziploc bag
you can knead it in using your fingers.
Pour water in slowly and keep adding until mixture becomes a
doughy consistency. Put oil in bottom of pan on a campfire rack,
or medium heat if on a stove. Form dough into a round fat pancake
shape and drop into hot pan. Cook until golden brown on bottom
flip bannock and cook bottom side until golden. Enjoy with lots
of butter and your favorite jam while still warm YUM!
